I usually pick my redbuds bare at that point where the blooms are almost completely gone – the pods are still tender and slightly sweet, and make some excellent omelets, stir fry, salad ingredients, ect.Β Β The early blooms are very sweet – I think I'll sacrifice some pods next year, and ferment some blooms!
